The rich heritage of Cajun cuisine began during the relatively traumatic Acadian Expulsion period in Canada’s history. More than 6,000 Acadians were driven from their communities and placed aboard ships or adjacent lands over a ten-year period. They would die, half of them. Some, mostly from Louisiana, would settle in New Orleans. The Acadians, who had little money and little resources, started adding ingredients from their new home to their traditional cuisines. The impact of various cultures that either resided or were compelled to dwell in the region started to seep into the food as they adapted and became ingrained in the terrain. What is today called Cajun cuisine is a synthesis of African, Indigenous, German, Italian, Spanish, and French influences. Yelp’s ranking method, which determines an adjusted rating value that accounts for both the quantity of ratings and the rating score itself, was used to choose businesses in the Cajun category. Only companies within ten kilometers of Orlando and with at least twenty reviews were taken into consideration. Additionally, based on our Yelp data, companies with more than ten sites nationwide were excluded in an attempt to emphasize independent companies and small chains.
